Our PLAATO team recently spoke at a fantastic webinar with EasyBrew and Prizm Brewery, diving deep into how automated fermentation monitoring can revolutionize your production. Antoine Kerrec from Prizm Brewery shared incredible insights, alongside our CEO Magnus, and our client success expert, Emily.

It was such a pleasure to dig into the details with our friends at Easybeer and Antoine from Prizm Brewing, a brewery who is known for constantly pushing flavor boundaries and experimenting with bold techniques. Prizm gave us a behind-the-scenes look at how they're streamlining their production using automated fermentation monitoring.

Antoine from Prizm Brewing explained how it's helped them: “We, like many breweries, used to take a single filtered sample per day and would note it on a small sheet, so only one piece of data per day at most. We like data and we wanted to have more monitoring to understand and increase the precision of our fermentations to optimise our production. Since installing PLAATO’s on all 14 fermenters and having full visibility across all our tanks at the same time, we’re achieving that and also saving a lot of time throughout the day, approximately 2.5 hours!

Antoine continued: “We reuse a lot of yeast and by seeing fermentation activity via the curves on the app, first of all we can see that it’s progressing as expected but also if we can reuse it. It’s a lot of work to run the deep analysis on yeast vitality and we’re not perfect. But by using the (PLAATO) Pro to track the progress, we can see very very quickly if something is different from usual and where we need to make changes. For example, in the below case I see the fermentation is taking longer so therefore I can react quickly and add a packet of yeast to ensure that it won't impact my production schedule too much. Really, it would be impossible to detect something like that with a single daily manual measurement.

Antoine, from Prism Brewing, further noted: “It's true that there are sometimes certain problems that have gone a little unnoticed before and which have caused us some worry. On several occasions, our fermenters have risen too high temperature wise due to our chiller breaking down. Thanks to the PLAATO temperature alerts directly on our phone, we were able to put solutions in place for it whether I'm at the brewery or at home.  We also use alerts to rest our lagers. I get an alert when the fermentation reaches the right point and then straight away, I can make modifications on my fermenter temperature."
